There are not many good dessert rums on the market and the Flor de Caña Centenario is one of the great ones. This rum hails from Chichigalpa in Nicaragua and is distilled, slow-aged and bottled by Compañía Licorera de Nicaragua S.A. The rum is distilled from pure sugar cane juice (not molasses) and is aged for 12 years in small, ex-bourbon white-oak barrels (quercus alba) and finally bottled at 40% a/v.
Tasting notes:
Colour: deep mahogany
Nose: Raisins, dried fruit and a touch of varnish or wood polish
Palate: Instantly mouth-filling, quite astringent at first, slowly warming and exploding with flavours of Christmas Pudding, Demerara sugar held together by undertones of wood tannins.
Finish: warm, tingling, long and moreish
Comment: This is one of the best dessert rums you can find on the Australian market and it needs to be sipped, straight. Don’t dilute it with ice or use it in a cocktail.
