Franz’s Cocktails


Green Turtle

2 nips of Amaretto

2 nips of freshly squeezed limejuice

1 slice of lime

Stirred and served over lots of ice in an ‘Old Fashioned’ glass and garnish with lime slice


Boidheach Boreannach

(Pron: Boyach Boranach – Gaelic for: Beautiful Girl – specially concocted for Burns Supper)

30ml Glenkeith Single Malt 10 y/o

30ml Amaretto

60ml freshly squeezed limejuice

Stirred and served with ice in a 'Highball' glass


Red Square Cocktail

2 nips of your favourite Vodka (My favourite is Wyborowa Single Estate)

1 nip of Dubonnet

Orange peel

Shake over lots of ice, strain into a ‘Martini' glass and garnish with a twist of orange peel.


Orea (Greek: Beautiful Girl)

1 nip of sugar syrup

1 tsp pomegranate molasses

1 nip of your favourite Cognac (My favourite is Paul Giraud Très Rare)

Lots of ice

A slice of lime

Combine syrup and molasses and stir well. Add Cognac and pour into a ‘Highball’ glass over lots of ice (enough to push the liquid up to fill the glass). Stir and add lime. Serve.


Swiss Guard

1 white sugar cube

4 drops of Angostura Bitters

1 nip of Bacardi 8 y/o brown rum

2 nips of your favourite Eau de Vie (My favourite is Etter Poire Williams)

1 slice of candied orange peel

Place white sugar infused with Angostura bitters into a glass; add Bacardi and stir until the sugar is totally dissolved. Add Eau de Vie, stir, pour into a Martini glass and garnish with orange peel. Do not add ice.


Lo Spirito Dei Poeti

2 nips of Tagliatella Grappa

Sanpellegrino Mandarino

1 mandarin segment

Pour Grappa into a tall glass, add ice and top up with Mandarino, garnish with the mandarin segment.


Queensland Sunset

6 drops of Angostura Bitters

1 nip of Rum

Juice of half a lime


Lime for garnish

Half-fill a Highball glass with ice cubes.  Add Angostura Bitters and swirl. Add Rum, limejuice and fill the glass with lemonade. Garnish with lime.

The Perfect Circle
A take on the Boidheach Boreannach, this works particularly well with Inner Circle Black Dot rum:
1 part Inner Circle Black Dot Rum
1 part Disaronno Amaretto
2 parts freshly squeezed lime juice
1 drop of Green Tabasco
Pour ingredients into an 'Old Fashioned' glass with lots of ice, stir and serve.


Tassie Blush

Lark Distillery Bush Liqueur



Shake equal quantities of Lark Distillery’s Bush Liqueur and Campari with lots of ice and strain into a Martini glass. Garnish with a curl of cucumber skin.

In a tall glass pour 1 nip of Southern Comfort Reserve and 1 nip of The Simple Syrup Co.’s Pomegranate & Tahitian Lime syrup. Top with ½ nip of Origine Gin and 3 drops of Angostura Bitters, then add 3 thin slices of fresh lime. Add lots of ice, top with a splash of soda, stir and serve.
